Keto Vanilla Cupcake with Cream Cheese Frosting

These cupcakes are so yummy and kicked the cupcake cravings! My two year old is obsessed with baking, and when he discovered that I had bought cupcake liners, there was no talking him out of them. Soooo I can up with these cupcakes on the fly while baking with a two year old! If I can do that anyone can make these tasty treats!

 

Ingredients:

1/3 cup coconut flour

1/2 tablespoon baking soda

1/3 cup confectioners swerve

Pinch of salt

4 eggs

3 tablespoons of melted butter

1 tablespoon vanilla extract

2 tablespoons of half and half

 

Frosting:

8oz cream cheese softened

1 stick of butter softened

1 tablespoon of vanilla

1 1/2 cup powdered swerve

Optional: 1 squirt of flavored mio, I added orange vanilla. Raspberry would be good as well! 

 

Directions:

Preheat over to 400°.

Mix together all dry ingredients with hand mixer. Add in remaining ingredients and mix until smooth with hand mixer. Line cupcake pan with paper liners. Fill each cupcake liner to the top with batter. Bake for 13 min for mini cupcakes, 15 min for full size cupcakes. Let cool completely before adding frosting.

 

Frosting: 

 

Add cream cheese, butter and vanilla to mixer and mix until smooth. Add in powdered swerve and continue mixing until smooth. Add to cooled cupcakes at room temp. You can pipe it on or add in with a knife.
