These biscuits are so good with soup, chili, sausage gravy or as a side.
8oz cream cheese
1 1/2 cups shredded mozzarella
1 clove of garlic
1 Jalapeño chopped
2/3 cup of super fine almond flower
4 teaspoon of baking powder
2 teaspoons of Italian seasoning
1 cup shredded sharp cheddar cheese
Preheat oven to 350°.
In glass bowl add cream cheese, mozzarella cheese, garlic and jalapeño. Microwave in 30 second intervals until the cheese is just melted. Mix together until blended and set aside.
In separate bowl add Almond flour, baking powder and Italian seasoning. Mix together and then add eggs. Mix well with either hand mixer or standing mixer. Add the mozzarella cheese mixture and again blend. Add in cheddar cheese and mix until it is all incorporated. It should look similar to corn bread dough.
Grease mini muffin pan with coconut oil and scoop dough evenly into muffin tin.
Bake for 15 minutes. Watch after 10 minutes for browning on top. You can remove them when they look slightly brown on top.
