My husband is obsessed with gooey half cooked hot brownie batter. I missed being able to make him his favorite treat so I started searching for a recipe that would help create brownies that we both loved. My perfect brownie has a little crisp to the top but moist in the center. It is also sweet but balanced with salt and nuts. I was able to achieve all of that with these SUGAR FREE & GLUTEN FREE BROWNIES!
6oz lily dark chocolate chips
6 tbsp unsalted butter
3 tablespoons coconut oil
3/4 cup swerve confectioners sugar
1 teaspoon vanilla extract
7 tablespoons super fine almond flour
1/2 tsp baking powder
1/2 tsp salt
Top with Chopped Walnuts
Sea salt flakes
Peanut butter melted with coconut oil
Heat oven to 350°. Line 8x8 glass pan with parchment paper.
In microwave safe bowl add chocolate chips, butter and coconut oil and heat for 1 1/2 minutes. Let cool.
In mixing bowl add eggs, swerve and vanilla. Mix on high for 2 minutes. Add chocolate mixture and mix on med speed until combined.
In separate bowl mix almond flour, baking powder and salt. Add to mixing bowl.
Combine all ingredient on med speed until completely mixed but don’t over mix!
Pour into pan and top with toppings of choice.
For really gooey brownies cook for 25 min. For more cake like brownies cook for 32 minutes. Let cool before slicing.
