Cauliflower Mash you will WANT to eat!
Growing up, when asked the question “what is your favorite food?” I would always answer “Mashed potaoes!” When insatered Keto that was probably the one food I knew I would miss the most! I went on the search for the best substitute, but was very disappointed with the options at the grocery store. I tried them all and they all were either watery and mushy, had a weird taste or both!
So I began experimenting with them at home and I have finally come up with my favorite way to make Mashed Cauliflower! My husband even likes them better than the real thing!
First I start by steaming a head of cauliflower. I cut them stems from the core and throw the whole thing on the steamer. Once the cauliflower is tender enough to cut through with a fork I take it off the heat.
Usually about 10 minutes.
Next I take a glass lid or bowl and push the water out of the cauliflower. THIS IS THE KEY TO NOT GETTING WATERY CAULIFLOWER MASH! Push the water out until you can get no more out. When you think you are done stir it around and do it again!
Next I add the cauliflower, heavy whipping cream, Parmesan cheese, salt, pepper and lots of butter to my food processesor.
Run it through the processeror until it is smooth and fluffy.
I keep the whipping cream out in case I need to add a little more to get it to blend better. I also will add smashed garlic cloves if I want more of the garlic flavor.
1 head of cauliflower
1/4 cup of heavy whipping cream (may need more)
3 tablespoons of butter
1/2 cup of Parmesan cheese
Salt and pepper to taste
Steam Cauliflower until tender. Remove from heat and push out all of the excess water from the cauliflower using the bottom of a bowl or a lid. Add all ingredient to your food processor and blend until smooth.
