These are seriously the easiest dessert ever! With only 3g of carbs per cookie they can be enjoyed by anyone on a low carb/ Keto diet!
3/4 cup shredded Coconut
2 Tablespoons of Coconut Oil
3 Tablespoons of Natural Peanut Butter
4 squares of Lily Dark Chocolate Baking Bar
I small glass bowl add coconut oil, peanut butter and Chocolate and microwave in 30 second intervals until melted.
Remove and stir every 30 seconds. I usually microwave for a total of 1 minute and 30 seconds. Carefully remove the bowl and add in the shredded coconut.
Stir until combined and scoop out 6 even balls onto parchment paper.
Shape them into cookies and place in refrigerator for 1 hr or freezer for 20 min. Enjoy :)
