Keto Chicken Bacon Ranch Casserole
So tonight for dinner I created a casserole using whatever I had left in my refrigerator from the weekend, and it turned out to be my husband's favorite Keto meal I have cooked yet!
It uses a lot of things Ketoians keep on hand anyway, so it is a great easy weeknight meal.
I started with a Rotisserie Chicken that still have most of the meat left on it since my toddler only had a few pieces of it for lunch on Sunday. and from there I just started grabbing things out of the refrigerator that seemed to go well together. I ended up with a delicious Chicken Bacon Ranch casserole that make you forget your even "dieting".
1 Rotisserie Chicken- Take off meat and pull apart (save the fat and broth that is at the bottom of the container.)
8oz block of cream cheese (softened)
1/4 cup of ranch dressing
8 oz bag of Shredded Mozzarella Cheese (You can substitute with Mexican, Cheddar or any mild cheese. Shred it yourself for less Carbs)
1 Small (10.8oz) Bag of Frozen steam in Bag Broccoli
7 slices of Bacon
Preheat Oven to 400º.
In Skillet cook Bacon until crispy. Cool it on paper towel and crumble. Drain most of the bacon fat, leaving only enough to coat the bottom of the pan. Add in the shredded Chicken and saute until browned and warm. Microwave the Frozen Broccoli according to bag's instructions.
In Medium mixing bowl add the cream cheese, ranch dressing and bag of Mozzarella Cheese. Stir them together and then add in the fat and broth from the rotisserie chicken container. Mix them together until it is all incorporated.
Add the cooked chicken, steamed broccoli and bacon crumbles into the cream cheese mixture.
Spread evenly in an 8x10 greased glass pan. Bake for 20 min until it is hot all the way through. Top with salt and pepper to taste.
Makes 6 servings- 7g carbs per serving
