These yummy banana muffins are a great way to introduce healthier options to your littles. They are not super low carb, because of the banana, but they are much lower than any muffin your children would eat otherwise. I like to have them for playdates, parties of quick snacks on the go for my toddler. They are very easy and require very few ingredients. I make them when my bananas start looking like they are at the end of their life and need used fast!
1/2 cup - Coconut Flour
2 ripe bananas
1tsp - vanilla extract
4 tablespoons - Warm Coconut Oil
1 Tsp - Cinnamon
1/4 cup of granulated Swerve
Dark Chocolate Chip- I use 1/8 cup
Crushed Walnut- 1/4 cup sprinkle them on top of batter
Preheat over to 350º. Mix all dry ingredients together and then add in eggs, bananas, vanilla and coconut oil. Line cupcake pan with paper lines and fill each one up 3/4 of the way. If using chocolate chips mix them in at the end. If using walnut chop them up and sprinkle on top before baking. Bake the muffins for 25 minutes and remove. Let them cool before serving. They will continue cooking a little bit once removed from the oven so do not over bake them. A toothpick should come out clean when fully cooked.
Makes 12 muffins
About 10 net carbs per muffin. No sugar and no flour! You can feel good about your kids having one of these!
