Keto Pizza that the whole family loved!

After doing Keto for a month we decided to finally try the Fat Head pizza dough.... I don't know what took me so long! My toddler LOVED it! He ate two slices himself which is unheard of for him!

I started with the Fathead Crust:

  • 1 1/2 cups mozzarella cheese shredded

  • 3/4 cup almond flour

  • 3 tablespoons of cream cheese

  • 1 egg

  • Garlic powder, onion powder and Italian seasoning

To make the dough first preheat your oven to 450°

Best put cream cheese and mozzarella into a glass bowl and microwave for 1 minute. I then put the cheese into my mixer and added in the dry ingredients and eggs with the mixer on low. Once all ingredients were a dough like consistency I dumped it into parchment paper, wet my hands and spread it out. I ended up putting parchment paper on top and rolling it out to get an even dough.

Bake it on the parchment paper on a pizza pan for 8 minutes. Remove from oven and poke any bubbles so they deflate.

Add any toppings you would like. Make sure to use sugar free marinara sauce. For my pizza I did one side with:

Heirloom Tomato

Fresh mozzarella

Fresh basil

Garlic cloves

Balsamic glaze- I made this by putting 1 cup of balsamic vinaigrette in a saucepan with 2 tablespoons on Swerve and heating on med-high until it started to thicken up. I whisked it the whole time and then removed it from the heat to let it continue to thicken. It was delicious!

One the other side I did

Mozzarella

Pepperoni

Italian seasoning

Both were so good. I preferred the tomato, my toddler loved the pepperoni!
