My approach on food for my children is different than some others on Keto. I have a two year old little boy who like many others is very picky. I involve him in choosing healthy foods by baking with him, cooking with him and encouraging healthier options. I am by no means perfect. I do break down and give him foods I would rather him not eat occasionally.  I think it is a fun challenge to find healthy foods that we can make together that he thinks are a special treat. Below are recipes that I have found my kids love as much us we do!

Banana Muffins

These yummy banana muffins are a great option for introducing healthier options for your littles. They are not super low carb, but they are much lower than any muffin your children would eat otherwise. I like to have them for playdates, parties of quick snacks on the go for my son. They are very easy and require very few ingredients. I make them when my bananas start looking like they are at the end of their life and need used fast! 

Ingredients:

1/2 cup - Coconut Flour

2 ripe bananas

3 eggs

1tsp - vanilla extract

4 tablespoons - Warm Coconut Oil

1 Tsp -  Cinnamon

1/4 cup of granulated Swerve

Optional:

Dark Chocolate Chip- I use 1/8 cup

Crushed Walnut- 1/4 cup sprinkle them on top of batter 

Preheat over to 350º. Mix all dry ingredients together and then add in eggs, bananas, vanilla and coconut oil. Line cupcake pan with paper lines and fill each one up 3/4 of the way. If using chocolate chips mix them in at the end. If using walnut chop them up and sprinkle on top before baking. Bake the muffins for 25 minutes and remove. Let them cool before serving. They will continue cooking a little bit once removed from the over so do not over bake.  

Makes 12 muffins

About 10 net carbs per muffin. No sugar and no flour! You can feel good about your kids having one of these!
